Ingredients

  • 1 bottle dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1 cup coconut rum
  • 1 cup pineapple juice
  • 1/2 cup cream of coconut
  • 1 cup fresh pineapple chunks
  • 1 cup strawberries, halved
  • 1 lime, thinly sliced
  • 1 cup club soda or sparkling water (for topping)
  • Ice cubes
  • To garnish: shredded coconut, pineapple wedges, or maraschino cherries

Instructions

  1. In a large pitcher, combine white wine, coconut rum, pineapple juice, and cream of coconut. Stir until smooth and well combined.
  2. Add pineapple chunks, strawberries, and lime slices.
  3. Chill in the refrigerator for at least 2–3 hours (or overnight) to let the flavors blend.
  4. Before serving, add ice cubes and top with club soda for a refreshing fizz.
  5. Pour into glasses and garnish with shredded coconut, pineapple wedges, or cherries.

Notes

For a lighter version, swap cream of coconut with coconut water. You can also make it extra tropical by adding mango or passion fruit!
